Pan Grilled Shrimp and Polenta Print Recipe

Slice polenta into 1/4 inch thick rounds. Add butter to a medium hot nonstick skillet. Add polenta and brown on either side - approximately 5 minutes, flipping once. Remove and set aside.

Add necessary olive oil to pan. Add shrimp, garlic and tomatoes to pan. Cook shrimp approximately 2 minutes on each side until done. Remove from pan, top polenta with mixture. Sprinkle parsley and shredded cheese on top. Serve.
