1. Preheat oven to 375°F.
2. Unroll puff pastry onto a parchment lined baking sheet. Spread an even layer of fig jam over it.
3. Place brie in the middle of the jam. Spread additional fig jam on the top. Sprinkle with pistachios.
4. Fold the puff pastry edges around the brie. Ensuring it is sealed.
5. Whisk together the egg and water, brush egg wash on top of pastry.
6. Bake 25-30 minutes, until the outside is golden brown.
Enjoy with sliced French bread, crackers or sliced apples.
