1. Preheat oven to 400°F. Lay bacon onto a rimmed baking sheet and cook for 15-18 minutes, or until crisp. Remove bacon to a plate lined with paper towels and set aside. Crumble when cooled.
2. Drain half the bacon fat from the pan, allowing enough left to roast the apples. Spread apples evenly on the pan and stir to coat with fat. Roast for 12 minutes, flipping halfway through.
3. Plate your favorite salad greens with crumbled bacon, blue cheese, pecans and roasted apples. Serve with desired vinaigrette.
