1. Preheat oven to 400°F.
2. Slice and peel onion 1/8 inch thick. Saute onions over medium low with 2 Tablespoons butter. Allow onions to caramelize slightly, approximately 25 minutes.
3. Whisk eggs and half and half. Season with salt and pepper.
4. Top pie crust with cheese, then bacon, then onions and lastly pour over egg mixture. Bake in oven for 50-60 minutes until golden brown.
5. Allow to cool slightly, enjoy when warm!
