1. Melt 1 tablespoon butter over medium heat and add 2 tablespoons oil. Once butter is melted, add onions, 1/2 teaspoon salt and sugar. After 10 minutes, add shallot. Continue to cook for 5 minutes or until caramelized. Remove from pan and set aside.
2. In the same pan, melt remaining butter and add oil over medium heat. Add mushrooms, 1/4 teaspoon salt and cook until tender and brown. Combine with onions and season with salt and pepper.
3. Cook pasta until desired doneness. Reserve 3/4 cup of pasta water. Toss pasta with mushroom and onion mixture and goat cheese. Add reserved pasta water to the mixture until desired sauce is created. Top with parmesan cheese and parsley if desired.
