1. Preheat oven to 350° F. Spray muffin cups with cooking spray. Be sure to coat all sides and bottoms well.
2. Press one piece of prosciutto, two each of cut pieces, into each muffin cup.
3. In a large bowl, whisk the eggs. Once well whisked, add cottage cheese, cheese, salt, pepper and chives.
4. Pour mixture into tins - about 1/2 - 3/4 full, until mixture is fully broken out.
5. Bake 30 minutes or until eggs are fully cooked.
