1. Saute zucchini, pepper, onion, thyme and garlic with 1/4 cup olive oil for approximately 6 minutes over medium high heat. Season with salt and pepper. After 6 minutes, add tomato and cook for approximately 3 minutes longer. Remove from heat and discard the thyme.
2. Generously season the tuna with salt and pepper. Heat remaining olive oil in a pan over medium heat. Add tuna to skillet. Cook for 3 minutes, flip and cook for remaining 2 minutes.
3. Serve tuna topped with vegetables.
