1. Preheat oven to 375°F. Spray a rimmed baking sheet with cooking spray, and place pork on top.
2. In a small bowl, whisk together the soy sauce, brown sugar, olive oil, orange juice, Dijon mustard, garlic, dried herbs, and pepper. Score tenderloins with a sharp knife. Pour the sauce over the top of the tenderloins.
3. Bake in the preheated oven for 30-35 minutes, spooning the sauce over the top of the tenderloins after 15 minutes. Bake until a meat thermometer inserted in the largest part of the tenderloins reads 145°F.
4. Remove from the oven and allow to rest before slicing and serving. Serve with sauce from the pan drizzled over the top.
